Coconut, vanilla chia breakfast pudding by

1 cup coconut milk
1 tbsp favourite nut butter
1 tsp vanilla extract
2 tbsp maple syrup
2 tbsp coconut threads/desiccated coconut
1/4 cup chia seeds


Put the coconut milk in a container with the chia seeds. Shake vigorously until it is mixed.

Add the remaining ingredients and shake until combined.

Put into the fridge to set.

If layering this with chia breakfast pot put in fridge in plastic container. If not put into a glass jar and pop in the fridge.

Pop her in the fridge and leave overnight.

Serve topped with sliced almonds, blueberries and shaved coconut or shaved coconut and goji berries.
